Dr. Surajit Mitra is a Professor and Former Head of the
Department of Postharvest Technology under the Faculty of
Horticulture at Bidhan Chandra Krishi Viswavidyalaya (State
Agricultural University), West Bengal, India. He acquired his M. Sc.
(Ag.) in Horticulture and Ph. D. degree from Bidhan Chandra Krishi
Viswavidyalaya in 1993 and 1998 respectively. He was awarded
several National and International Fellowships, and participated
in International Training Courses on Postharvest Technology at
Kasetsart University, Thailand; Postharvest Education Foundation, USA; Agricultural
Research Organization, Israel; and Wageningen University, Netherlands. He also
attended and presented several research papers, and delivered lead lectures on nutrition
and postharvest technology in International Conferences in England, Germany, Belgium,
Luxembourg, Sri Lanka and Bangladesh, and both in National and International
Conferences in India. Prof. Mitra delivered a keynote speech and chaired a Technical
Session in the 17th World Congress on ‘Nutrition and Food Chemistry- 2018’ at London,
UK. He has published 71 research papers in peer reviewed national and international
journals, authored 20 book chapters and 4 books on different aspects of postharvest
technology of horticultural crops. Prof. Mitra has supervised 11 students of M. Sc. (Hort.)
and 9 students of Ph. D. in Postharvest Technology. He has developed two varieties
each of sweet potato and eddoe taro, and one variety each of dasheen taro, elephant foot
yam and swamp taro. Among various recognitions, Chaudhary Debi Lal Outstanding
AICRP Award from Indian Council of Agricultural Research as a team member of AICRP
on Tuber Crops; Best Paper Award by International Society for Horticultural Science
for a collaborative research work with colleagues in Venezuela; Outstanding Scientist
Award-2018 from the Society of Tropical Agriculture, New Delhi, India, Eminent Scientist
Award-2016 from Samagra Vikas Welfare Society, Lucknow, Uttar Pradesh, India,
Outstanding Scientist Award-2015 from Venus International Foundation, Chennai, India;
Achiever Award-2015 from SADHNA, Dr. YS Parmar University of Horticulture and
Forestry, Solan, Himachal Pradesh, India are noteworthy. Dr. Mitra is an Editorial Board
Member of International Journal of Forestry and Horticulture, Permanent Honorary
Board Member of Society for advancement of Human and Nature, and Invited editor for
special issues on nutrition and postharvest technology in some Open Access Journals. He
is also a Life Member of the Indian Academy of Horticultural Sciences, Indian Science
Congress Association, Society for the Advancement of Horticulture, Indian Society for
Root Crops, and Crop and Weed Science Society.
Professor T.K. Bose awarded M.Sc. (Ag.), Ph.D. degree from
Calcutta University, West Bengal, India. Former Horticulturist
and Secretary of the Agri-Horticultural Society of India; Project
Coordinator, All India Coordinated Floriculture Improvement

D.Sc. (Honoris Causa) from OUAT, Bhubaneshwar, Odisha and UBKV, Coochbehar,
West Bengal, India. Guided around 45 students for their Ph.D. degree, published more
than 250 research papers and authored 30 books on horticultural crops.
About The Book
In this book, an attempt has been made to cover the most important aspects of postharvest management of tropical fruits and vegetables including new development in postharvest technology along with the conventional technologies. An attempt has also been made to highlight major causes of spoilage of fresh and processed products with proper postharvest management for reducing loss and maintaining quality of harvested produce to make fruits and vegetables available all the year round either in fresh or processed form.
This book is based on syllabi of different courses on postharvest technology offered both at undergraduate and postgraduate levels in the agricultural and horticultural universities. The endeavour in compiling this book will only be successful if the students, researchers, teachers, extension workers and interested people find this book useful.
