Author Profile
Robert Jenness was Professor of Agricultural Biochemistry at University of Minnesota. He earned Ph.D. in biochemistry from the University of Minnesota. He was member of the American Society of Biological chemists, the American Dairy Association and the American Society of Mammologists.
Stuart Pattor obtained his Ph.D from Ohio State University. He served as Professor of Dairy Science at Pennsylvania State University. He is known internationally for his research and teaching on milk chemistry and the biological processes that regulate milk synthesis in mammary glands. Dr. Pattor holds membership in numerous professional societies and has received several prestigious awards.
About The Book
The present book deals with basic principles of dairy chemistry which includes composition of milk, milk lipids, lactose, proteins, salts, enzymes, and physical properties of milk, physical chemistry of milk fat globules and caseinate-phosphate particles in milk, effects of heat, flavors and off flavors in milk and its products and nutritive value of milk. Appendix and index have been appended at the end of the book.
